Meal Hack When You Have Zero Time

Today I was going going going from 6am until just now - 9pm. I just wrapped up the first workshop in my Summer School Series of Continuing Ed for Yoga Teachers. I am tired, but my heart is really happy. I truly love what I do. And something about sitting down and writing this blog post feels like a really nice way to end the day.

While the pace of everything feels fast, everything is sort of going in my favor. The stock I sold yesterday finally turned into liquid cash, so I was able to initiate the transfers. The loan for my new house was officially approved and I got a text saying I was CLEARED TO CLOSE!!!! Wooooo. So that’ll happen next week, God willing. I got a text from an old client asking to set up 3 weekly sessions, so that felt fabulous as someone whose slow season is slowwwwwly returning to normal. And I got an invoice from a client all paid up, which as a small business, just really really helps. So yeah, today was a good day.

What I’m struggling with lately is time to cook. I wound up going into Whole Foods on a mission to buy some pre-cooked stuff because I just don’t have the time these days with my impending close, and move happening. I intended to hit up the hot bar, but I remembered there’s a prepared food section in the refrigerated area, and I found these 4 salmon filets, green beans and sweet potatoes for $26! This is something I did months ago but totally forgot about. I have no idea if these salmon filets are on their last leg or whatever - like, I cannot figure out why it’s priced so inexpensively - but it’s a real game changer when you don’t have time to cook and you just want some healthy meals. So I had that for dinner 10 minutes before the workshop I had to lead tonight. Whew!

I also picked up this Four Sigmatic bag of coffee beans. Lion’s Mane is supposed to be great for gut health, immune system function, blood sugar levels, brain fog, and more. I haven’t taken it regularly in ages, so we’ll see what it tastes like and how it affects me starting tomorrow. I’ll keep ya posted.
